Artisanal Loquat Jam. Loquat (níspero) is a small, golden fruit particularly associated with Spain's Alicante region. In Singapore, they are better known as pipa (枇杷). Don Gastronom slow-cooks the fruit down using the same small-batch methods as the rest of its jam range.

Preparation and Texture: Loquat is naturally rich in pectin, so the fruit sets into a glossy, spoonable jam without needing much help. The flavour is mildly sweet with a gentle tartness, often compared to apricot but lighter.

Serving Suggestion: Spread on toast or scones for breakfast, or serve alongside a mild, fresh cheese where its delicate sweet-tart profile won't be overpowered.
