Preparation and Texture: Maintaining Ramón Peña’s century-old, artisanal practice, these sardines are hand-cleaned, gently grilled and toasted, and then meticulously hand-packed (8–10 pieces) into the tin. This delicate handling ensures the integrity of the fish, delivering a firm, meaty texture and a richer, more profound flavour profile. The large bones are softened through the canning process, becoming entirely edible and a natural source of calcium.
