Caught the Old Way. "Do xeito" refers to a centuries-old Galician fishing method using a specific type of drift net, still practised by a small number of boats in the Ría de Arousa. Ramón Peña sources these small sardines from dawn catches, sorted by size before preparation, then packs them in a smoked olive oil that lends the tin a gentle smokiness alongside the sardine's natural flavour.
Preparation and Texture: The sardines are brined, hand-cleaned and trimmed, then steam-toasted before being packed by hand into the tin. This is a more delicate preparation than a straightforward oil-pack sardine, aimed at preserving the fish's texture rather than masking it.
Serving Suggestion: Best served simply: straight from the tin with good bread, or laid over a warm potato and onion tortilla. The smoky oil is worth saving to drizzle over both.
